Ice is used straight away to Preserve the fish whilst it is then taken to a smoke house and prepared by a small family run business in Wiltshire. It`s a delicious oily fish that is high in Omega-3, and full of essential nutrients. I have eaten a lot of smoked salmon in my time, some of very high quality and was not sure how different this smoked trout would be. I was so impressed by the subtlety of the smoked flavour which lent itself beautifully to canapes as well as scrambled eggs. The slices were beautifully thin so that the product was a delicate delight from start to finish. I can highly recommend it as a locally sourced product of the highest order.
